The dough is made using a traditional Italian recipe… Our dough is not too thick and not too thin encircled with a crunchy crust.
We use exclusively regional hardwood to generate a maximum heat. All wood is stored for a long time to create the least amount of smoke, which is ideal for steady burning of the wood and a perfect cooking environment, which is 330-360 degrees Celsius (high dry heat). The outside temperature of the oven is 60 degrees Celsius to ensure a safe environment for the chefs and guests.
